The Domaine Chavy-Chouet is located in Meursault and has been run by Romaric Chavy and his wife in the seventh generation since 2014. After six years of teaching at the wine-growing college in Burgundy, internships with his godfather François Mikulski, and with winemakers in South Africa, Italy, Greece and Spain, Romaric returns to the family winery.

Proud of his roots, he cultivates 15 hectares of vineyards in 14 different appellations, moving between precision, tradition and innovation. The winery's great treasure are excellent plots in Meursault such as Les Narvaux, Les Charmes, Les Genevrières and the monopoly location Clos de Corvées de Citeau. In Saint-Aubin it is the 1er Cru Les Murgers des Dents de Chien, whose quality has increased significantly with climate change. There are also Les Enseignères, Les Champs-Gain and Les Folatières in Puligny-Montrachet as well as Pinot plots in Volnay and Pommard.

The vines, which are up to 70 years old, have been cultivated without herbicides for over 30 years and have been cultivated exclusively organically for several years. Romaric has memorized a sentence from the winemaker icon Henri Jayer: "Young winemakers should keep up with the times and study oenology very carefully in order to then get along without it." Fresh, precise, tonic and minerally characterized white wines stand next to clearly structured, quite powerful ones and at the same time fruity and finesse red wines.
